I am covering existing interior walls (stone/plaster) with gypsum on 45mm studs.
I am considering filling the cavities with insulation to reduce noise between the rooms, but then, of course, I lose air circulation in the walls.

The only problem I see is if your wall is on the ground, then you need to ensure that ground moisture can rise, or if you know what you are doing, remains in the wall. If it is on the ground, you cannot have a wooden stud against it, as there is always a risk of too high moisture content in the wood. You don't want that!
I have used steel studs on exterior walls made of concrete blocks, where I haven't used any insulation, to avoid the risk of insulation absorbing moisture and transferring it to the OSB. If you're insulating a wall on the ground, then use some form of foam plastic (unfortunately it dampens sound worse because it doesn’t “cushion” the structure as well).
If the wall is not against the ground, you can do whatever you want, I would say.
