Does anyone know where to get very thin plywood? Or some similar material that's about 3mm thick?
 
What are you going to use it for, masonite is usually 3.2mm in the normal case.
 
4mm pine plywood available.
 
Google airplane plywood and choose a suitable supplier.
Thin fine plywood, often made of birch, is usually called that.

Or search for a furniture carpentry shop, they surely have something to choose from..

Veneer exists. Glue a bunch together until you get the right thickness =)
 
If you're looking for smaller pieces, you might want to check IKEA's scrap sales.
I found 3mm MDF with a wood-patterned paper film on one side.
It was the back of a bookshelf. 40x160+40x160 cm for 19 kronor.
