A thought:
I've had parquet removed and old carpets, glue, etc. that were on the underlying wooden floor cleaned. It all ended with vacuuming and wet mopping the old wooden floor.
How long do you think the floor should be free to dry before I lay lumber paper and screw down a new wooden floor on top? I do NOT want to risk creating moisture issues and trapping moisture between the old wooden floor, new lumber paper, and new wooden floor. What do you think about this?
The contractor said he wouldn't "pour on" water but would mop with "just enough" water.

What is good for you is that it is not a dense construction, so any moisture will disappear on its own. If the surface feels dry, go ahead. If you want to be more certain, you can buy a moisture meter, for instance at Biltema for 100 SEK, and check that the moisture content is not more than around 15%, which is the approximate limit often considered when repainting exterior facades.
