I am going to build an extra room in our apartment.
I initially thought about building the walls with steel studs but considered how it would be if we want to hang heavier items on the walls. In a wall with wooden studs, I would locate the studs in the wall and mount, for example, a heavy shelf directly on the studs instead of in the middle of the MDF/gypsum boards. Can you do the same with steel studs? To me, thin metal profiles don't seem like as good an anchor as wooden studs – am I thinking wrong?

OSB+gypsum allows you to attach basically anything anywhere (y)

It doesn't matter.
You should use double boards like OSB + gypsum so you can put things up without having to hit the studs.
Expansion bolts also work if it's really heavy items.

As an alternative, I say k70 plyfa and gypsum, especially now when OSB is almost as expensive.

If you run with dual discs, go down in rule dimension to save some width!
