I have read several threads but am still not entirely sure about this question.

In our new house, I have removed the walls that divided the kitchen, the living room, and a bedroom. According to the inspector, the walls were not load-bearing, and the ceiling's hardboard panels were mounted on top of the walls, meaning that when the house was originally built in the 60s, they put up the walls after the ceiling was in place.

BUT now that the wall is gone, I'm unsure. It feels like it's sagging, and I would gladly take your second opinion. Maybe I've made a huge mistake, or the nearly 55-year-old hardboard ceiling is just a bit bent.

Attached is a picture and floor plan where I have marked in red the walls that have been removed.

Measure if it is straight or not.

It's a butterfly roof, so I'm unsure how to measure them.

Have you measured so you know if the roof has sunk?

Measure at the points below from floor to ceiling (just make sure it's the same floor level), a laser measurer is good for that.
It doesn't necessarily mean the roof has changed after wall removal, but it can give an indication for further investigation.

Wall No2 I would probably have been cautious with until it is properly investigated. I would have supported it, I think...

Which walls are supposed to be load-bearing according to besman?

edit: which floor is it?
 
With that roof construction, the wall that separates the living room from room 14 and this wall's extension through the house are load-bearing and must be immediately restored. Keep in mind that it is now, with the snow coming, that the risks begin to arise.
