Hello!
I have read about how a sauna wall and ceiling should be constructed. It's very unclear what applies.
One wall borders the bathroom, one the cold attic, and one the exterior roof.
I don't quite understand how the air gap should be constructed and where the sauna foil should be placed in relation to the air gap? Planning to have vertical paneling and a base of tiles.

There are several different theories about the construction of a sauna wall.
More information can be found on the various manufacturers' websites, e.g., Harvia.
If you already have a vapor barrier in the wall against the cold attic and exterior roof, I wouldn't put any foil there.
