I plan to have window casings in MDF about 400mm deep that I intended to attach to the wall using screws and then plaster over them. However, the painter was up in arms when he found out. He said it will be visible after a while.
Any tips for alternatives?

It can indeed show after a while.Mattiaz said:
A tip is MDF reveals with grooves in them.

I attached mine with adhesive like PL600, although only 100mm deep, they've been solid for almost two years now. However, I did screw in the "lower reveal" which became the windowsill. There, I countersunk and filled. The filler has risen a few mm (weird?!), it hasn't cracked but just raised up. It's not very noticeable because of all the pots, but it would be unfortunate if it happens with the side and top reveal.

I have screwed my smygar, top and sides. Filled and painted without seeing anything after about 1.5 years. If it has lasted this long, it should last, I think. I did countersink the screws quite deeply, which may have helped.
Use PlasticPadding or equivalent 2-component filler, easy to sand, never sinks
most so-called carpenter's fillers are worthless in comparison
