I'm planning to re-wallpaper two bedrooms in our Älvsbyhus from '87 and I'm wondering if it might be a good idea to soundproof the walls as well, since one room is adjacent to the bathroom and the other to the living room.
How do you recommend doing this? There is currently only particle board. Is it enough to put up a plasterboard? Or should I double it? Maybe remove the particle board and insulate, then put up plasterboard?

It depends on what requirements you have. If you want it completely silent, it requires some work. Particle board should be avoided in sound walls. But if you want to keep it simple, I suggest: remove the particle board, fill with insulation, and apply double plasterboard.

Section 2.1.51 seems to be about wooden studs.
If your studs are at cc60 now and are 70mm thick, with no insulation, and you have single gypsum board on both sides, the wall would dampen 30dB. Chipboard is worse, so presumably you are below this now. Chipboard isn't included in the tables, so I'll assume gypsum board for the following.
If you only added 30mm mineral wool, you'd be at 30-35dB.
If you just used double gypsum board on both sides, you'd be at 35dB.
If you did both, you'd be at 40dB.
She picked some numbers from her head that are used in the planning of primary schools, for comparison:
Between classroom and corridor, there should be a 40dB wall.
Between two classrooms, there should be a 44dB wall.
So if you want to make it easy for yourself, you can maybe gain 5dB by throwing on a layer of gypsum board over the existing boards.
