We have an old chimney breast that is no longer used in the living room.
I would like to cover the front of it with a wooden panel, which I can then use to hide cables and mount a TV.

I am thinking of installing two studs from floor to ceiling, and then screwing up, for example, a plywood panel on these studs so that there is a little space behind where I can run cables.

I thought about screwing the studs to the plastered chimney breast. The house is from 1920.

I have a box of "light concrete screws" that I've used to attach a sill to lecablocks. Can these be used?
Or what would be best?

Or what would be best?
The lightweight concrete screw is specifically for lightweight concrete.
You should use some longer nail plug.
