When we installed the interior doors, we made an annoying mistake, we didn't account for the frames standing on the parquet floor
We have a couple of different solutions, one of which is to saw off about 1 cm from the frames and door, but to avoid taking them down, we were considering sawing them in place. It's fine to saw moldings and similar on-site with a multi-tool, but I'm afraid it will be difficult with a thick frame where the two meeting floors also have different heights?

Yes, that's how I initially thought of doing it, but the different heights of the floors complicate it a bit.

But should the parquet be laid in both rooms? You don't need to saw off the entire frame; it's enough to notch out a few centimeters so that the parquet just fits under the frame. That's how it's done when laying parquet on an existing floor, and then the threshold compensates for the level difference.
Yes, there is parquet in both rooms but it has only been laid up to the threshold in the adjoining room. Additionally, it's not always easy to tuck the parquet under the door frames, especially if it's click flooring that needs to be folded in (I have another thread about exactly this).
