I'm thinking of placing a rubber mat (pit mat, completely sealed) 1m*2m on the garage floor, which is an uninsulated slab. Will a lot of moisture accumulate under the mat, or will it escape around where the floor is open?

There will be moisture underneath it.

I suspect so too. I don't know how capable it is. I perceive it as quite dry. Maybe I could perforate the mat with small holes. Should probably work?

Try and see how damp it gets or place a piece of platonmatta underneath or find a rubber mat that is ribbed on the underside.

I don't know if it's a problem with a little moisture on the concrete, but a simple solution is to place these under for ventilation (or maybe replace them with inflatable boats?)

True. Maybe I'm making it a bigger problem than it is. If nothing else, I could try to be less comfortable and lift the rug now and then.
