The paneling in the kitchen should be removed! The question is how to patch up the wall afterward? Do you screw drywall over the entire wall, i.e., on both the wall and the paneling? And in that case, how do you handle around the door frame where the drywall adds 6 mm??
Or do you remove the paneling and just "repair" there with chipboard?
Or do you remove the paneling and the wall/board above to then apply drywall?
 
An image would make it easier to provide a good answer. But spontaneously, I would say remove the paneling and screw on new plasterboard.
