I am thinking of replastering the chimney in the downstairs area. I've read around and gotten some info, and in summary, you're supposed to "knock off the loose parts and plaster with lime mortar."

I've done a lot when it comes to renovation, but this is something I don't have much feel for.

If you knock hard enough, you will probably be able to chip off all the plaster, but how should I determine if it's firmly attached or loose?

I poked around a bit at one spot and it's possible to scrape into the mortar between the stones. Should I do that too? And if so, is lime mortar also the way to go there?
