Planning to close up where a door was and open up to the right in another room, then build a wall where the photographer is standing roughly. There's 9.5mm treetex throughout the house and I can't seem to find any drywall of similar thickness to close up.

Is it better to tear everything out and replace with drywall, or some variant with renovation plasterboard?

Aha, what's the difference?
 
make the studs a bit narrower and then you can use standard plasterboard?

the hardness tretex is softer than board
 
If you can push a thumbtack or nail in by hand, it's tretex. If you can't, it's a particleboard.
