Remove plaster from the chimney

The plaster on our chimney has come off a bit and we're considering removing it completely.

Is there anything special we should keep in mind then?

I am also wondering if you have to contact the chimney sweep for a new pressure test (We have just done one)?
If the plaster has any significance for the tightness or something like that?
