I have thoroughly read the installation descriptions but can't make sense of what counts as radiation protection...?

The stove (Jøtul 602F) will be placed in a corner, perpendicular to a log wall. That is, the short side will face a log wall and the long side towards a wooden kitchen counter.

The part involving the kitchen counter (a short side) can have radiation protection built into it.

But how do you provide radiation protection? Is it enough to build up some brick around it with an air gap or how do you proceed?

The purple color shows the radiation protection. What should it consist of? Does it need to run along the entire chimney? How deep does it need to be?

I want the stove as close to the wall and counter as possible. And as mentioned above, the short side of the counter can be built in any way since it hasn't even started yet!
