I'm going to insulate the garage for the winter and then cover the walls with metal. Should one do it the same way as in a house, insulating and then putting age-resistant plastic on top and finally the metal? Or is there another good way to do it?
 
In my garage walls, I have (from outside to inside):

Panel/batten
Sparse panel/nailing batten
Exterior gypsum
Studs/Insulation
Age-resistant plastic
OSB
Gypsum

So if you plan to have insulation/heating, you should have plastic.

If you are going to have the sheeting on the inside, I am wondering if you shouldn't put a batten between the plastic and the sheeting so it can ventilate a little.
 
Yes, that's what I was planning to do, just like on the outside inside the panel.

Then you also avoid the sheet metal screw going through the plastic
