Hello!

I am in the process of plastering around a window instead of using a traditional window lining.

A thought that has come up is that the distance between the stud and the window frame differs around the window, which creates a need for spacers (or?)

In the pictures is an example. At the bottom, the distance is 11 mm and higher up it is 14 mm.

Will it be noticeable, or do I need spacers? And what should I use then?

Yes, it will be visible, plywood strips as well as masonite work well for shimming.
