Plaster stone wall?

Hello,
I'm setting up a workshop and now need to fix the walls after pouring a new floor. The old plaster has been knocked off and it's now time for new plaster. The workshop will be heated to about 15 degrees when everything is finished.

What should I plaster the walls with?
