How long should you keep the plaster covered?
I watered the plaster two days in a row and have kept it covered with plastic the entire time. But now on the 5th day, the plaster has really only dried at the edges. Still dark on the rest of the surface.
Should I just continue to keep it covered until everything is dry, or can I remove the plastic now?
This concerns an indoor wall.

Sounds like what you've done is overworked for an indoor wall.
Outdoor during hot summer days with direct sun is one thing. Indoor is something else entirely.
I would have taken down the plastic and let the wall start to dry.
What type of substrate did you plaster on that hasn't absorbed the water from the mortar already?

I might have gone too far the other way now =)
It's a brick wall on the second attempt. The first time I watered the bricks and watered afterward, but didn't cover with plastic, and it dried too quickly so I got cracks.
So now I used primer instead of watering the brick wall and have kept it covered with plastic the whole time. But it can't dry too slowly, right? So maybe no harm done if I remove the plastic now and let it finish drying?
