I'm thinking of building a pergola over the outdoor kitchen.
If you check the Swedish Wood dimensioning guide, you should have sturdy dimensions, which will be hard to lift.

The pergola is 5.40 long, where it is critical, with one pillar in each corner.. will it be enough with a 90x315 or 90x360?
According to their table (deformation) it's 19mm on a 315, does that mean it will flex that much?

There won't be a roof, only slats or rafters, whatever you want to call it..
 
If you can go up a dimension on the posts, it is preferable. I regret being stingy almost 20 years ago. I have 250 cm between the posts and also have reinforcement on top with cross wires.

If you plan to have any form of climbing plants, you must also consider the extra weight.

In my case, the construction supports two sailcloth roofs with large and strong wind resistance, which is naturally worse than plants.

A pergola has no roof, you don't get any snow load, it just has to carry its own weight. So you can have a 45x170 if you want. Where does Svenskt Trä say you should have 90x315 for a pergola?

Not only the load-bearing capacity is important, but also the proportions of the construction. You often see visually too weak structures, it doesn't look good.

Adding braces makes the entire structure sturdier and you can reduce the dimensions. The pergola is usually not the main focus and it's good if it's not too bulky.
