Hello,

I will use these wooden beams in the dimensions of 20x15 cm as an interior wall 160 cm high in a shelter (I have 20 of them). First, concrete foundations in the ground, then the first beam and stack them on top of each other. But how would you attach them to each other? Dowelling? Nail plates at the edges?

What do you mean by open housing, splice everything continuously or? And how many are you going to stack on top of each other, i.e., how high is the partition wall?
 
I would have drilled and fastened them together with dowels like a regular log frame.

He he, loose housing = conservatory for horses.

I would have placed one of them on each side where you plan to build the wall and attached a metal u-profile, then just slid in planks (of a slightly more reasonable dimension) like a skiftesverk. It's very advantageous and easy to replace any potential rot in a few years, just saw a cut in the middle and push out, and the others drop down. Then you just fill in from the top.

This can probably also be done with your blocks, but I just think it feels unnecessarily coarse.

Through holes with threaded rods that clamp them together, like a log mat.

This could probably be done with your blocks too, but I just think it feels unnecessarily bulky.
If I chose @Tsdoesds's suggestion with planks between U-profiles, I would also place such a metal profile on the top side of the wood to reduce gnawing and increase longevity.

It becomes a metal strip on the edges.
