Behind the bedroom wall, there's a staircase and a door; both make quite a bit of noise when people run in and out. The wall in between is a concrete/brick wall. Can I put triple layers of drywall against that wall to dampen the sound? I've heard that drywall is supposed to be quite good for soundproofing.

If you can spare 5-6 cm of floor space against the wall facing the stairwell, you can build an insulated inner wall with metal studs and two to three layers of drywall with a few centimeters gap between the existing wall and the back of the metal studs.
Use metal tracks with fabric or sealing strips.

Yes, that definitely sounds doable. I've googled for metal tracks with fabric but can't find any. Would you mind linking an example?

There is also PE fabric on a roll to glue yourself onto the tracks.
