The carpenter I hired told me that I should buy moldings (ceiling and baseboard) from companies that have stored the moldings in a heating room for 2 weeks. He advised me against buying from companies that keep their moldings outdoors.

The vast majority of stores sell their moldings that haven't been in a heating room. If it was so important, it’s strange that most don't store their moldings in the correct way.

So what do you think? Does it make such a big difference?

It matters. But buy whichever moldings you want and dry them in the room where they will be installed for 3-4 weeks and it will be fine. (Provided the room is properly heated)
