Does anyone have good tips on how to create a neat transition between the floor and a plastered chimney breast?
The chimney breast is not completely straight but plastered with a "slightly wavy" form, which means a straight molding won't look nice.

Are there perhaps flexible moldings/skirting boards?

A small nice quart stick maybe?? Follows the irregularities fairly well.
 
Do you need list? Maybe a mjukfog?
 
If the chimney is plastered "livande" it would look nice with a molding with good liv as well. Profile draw and cut/hand axe out in a rough or horizontal molding, preferably hand-planed.
