We are going to install a Viking 30 stove in our kitchen. I've heard that you should have lightweight concrete around the stove against combustible materials. The lightweight concrete seems very fragile. How do you treat the visible parts? :-*

Plaster and reinforcement.
If you don't reinforce, the plaster will probably come off here and there.
I built my own stove model with custom-cut pieces of lightweight concrete, reinforced with chicken wire and plaster around it. Painted with semi-matte wall paint. Flawless for five years. Easy to wipe off and looks nice.
 
Where can you buy pieces of lightweight concrete? Surely you should be able to tile on it too?
