Just because you didn't thoroughly inspect the house before purchasing doesn't mean they're hidden defects.
Why didn't you check this before you bought it?
Fix the issues and move on. You have nothing to gain from the seller.

In order to investigate further, I would have had to remove all the masonite to be able to see and examine

It is difficult to get any money from the estate that sold. It is a matter of defects that could easily be discovered upon examination, unfortunately.
What does the water-filled pantry look like? Is there any organic material, like chipboard or other wood-based material? Remove it, if so! Is it possible to make a small sump in the floor and put in a submersible pump to remove the water that way?
As for the roof, it is probably "just" a matter of starting to plan and save money for a roof replacement next summer. Depending on why you are on disability pension and what abilities you have, it is best, at least from an economic standpoint, to do as much of the roof replacement as possible yourself, or with the help of family and friends. You write that it looks okay at the ridge. Put a new ridge cap there for now, and you should manage through the winter at least.
