Joint instead of molding between ceiling and wall?
...would it work? I'm having trouble finding suitable molding for the living room and I'm starting to think about applying a thick soft sealant there instead. The wall/ceiling edge is quite good, so no molding is needed to hide anything, but it might look nicer.

The subject is becoming somewhat classic and there's a recurring dilemma. Namely, the joint and surrounding sheet material crack. As long as you have the patience to drive out all construction moisture and attach ceilings and walls separately and avoid overhangs, it can surely be done. Additionally, use as elastic a paintable sealant as you can find, not the usual "cheap" one.
The problem with waiting is that you might choose different colors for the walls than the grout, so then you'll have to repaint everything after next winter.... I would grout but let it dry for 1 week, then paint. However, I'm just a happy amateur, so a professional might have a different idea?
I filled the gap between the ceiling/wall and only waited until it was surface dry... looked fine for about a week, then the paint cracked... not the joint, it held up, it was the ceiling paint that cracked. But I touched it up last when the rest of the room was finished (after a couple of weeks), and it turned out great. It's been standing for over six months now and still looks good... so if you have time, you should wait for the joint; otherwise, it takes 5 minutes to paint over the cracks...
