Which board material is the stiffest? Am I using the word correctly? Let's say I have two sawhorses 250 cm apart and want to place a piece of board (40 cm if relevant) on them - which material will bend/flex the least? Plywood? OSB? Just a regular pine/spruce board? And is there a big difference between a regular pine/spruce board (like this one https://www.bauhaus.se/limfog-gran-28x400x2500mm) and plywood/OSB/MDF?

Clarification: 250x40cm board on two trestles as an example. But my question is general - which wood-based sheet material commonly available is the stiffest?
 
How are you going to use the board then? Ceiling, floor, or wall?

What type of strength do you want in the material?
 
Straight answer
Solid wood of the type you linked to is stiffer than plywood of the same thickness, regardless of the plywood's quality. Possibly blocklaminate might be stiffer, but it's a product that is not so common anymore. If you compare stiffness per krona, the difference is even greater in favor of the wood board.
