Is plywood stiffer than a pine board?
Which board material is the stiffest? Am I using the word correctly? Let's say I have two sawhorses 250 cm apart and want to place a piece of board (40 cm if relevant) on them - which material will bend/flex the least? Plywood? OSB? Just a regular pine/spruce board? And is there a big difference between a regular pine/spruce board (like this one https://www.bauhaus.se/limfog-gran-28x400x2500mm) and plywood/OSB/MDF?

Solid wood of the type you linked to is stiffer than plywood of the same thickness, regardless of the plywood's quality. Possibly blocklaminate might be stiffer, but it's a product that is not so common anymore. If you compare stiffness per krona, the difference is even greater in favor of the wood board.
