Planning to build an interior wall for the first time (maybe the last time too ;)). It should be reasonably quiet and the work must go quickly, meaning there can't be too many steps. No heavy items will be attached to the wall once it's finished.

The plan is drywall on both sides, 45 studs with insulation in between. The surface will be puttied and painted.

Is there a better/simpler solution? Anything to keep in mind?

I would have liked to avoid the step of strips and putty in the seams between the drywall panels, is there an alternative surface that doesn't require so much painting work?

If you're going to do it once, don't choose 45x45. It's too thin, and the whole wall will flex a lot and risk cracks in the surface. Use at least 45x70.

To avoid plastering, you can use 120cm wide and cut off the sides of the drywall so they are straight and 13mm (and not around 9-10mm). Then directly use renovation wallpaper on top which you set perfectly edge to edge, and then paint with a quality paint that covers well. However, renovation wallpaper is quite expensive and probably more work than just plastering the damn thing and avoiding having to specially cut the drywall.
