Recently bought timber (even from two different companies) and on a few planks, you can find small holes and tunnels.
Is this something not to worry about?
Or, on the contrary, is it dangerous, can insects that caused this remain and infect the rest and the finished building?
What kind of insect caused it?

Thanks for the tip, but unfortunately it doesn't give me the answer to the most important question, namely - is it safe to build with this wood?

That looks like typical tracks made by wood wasps and is nothing to worry about unless you have a surface that needs to be visible and aesthetically pleasing. The larvae are probably long gone by now. I cut wood myself and have used a lot of my own lumber with tracks without any problems.
