How do I make the posts straight when casting?

I have a paved slope. About 15 posts will be cast into the ground to eventually become a handrail.

The posts to be cast are galvanized pipes about 1.4m high.
At the bottom, there are large stones.

How do I make the posts straight when casting? I can't stand and hold each post until the mortar has set

You can support your posts with two props pointing in opposite directions with a 90-degree offset.

do you mean I should lean like planks against the post? One from each side...?

No, you should preferably screw them into the post.

The post will be in galvanized steel so you can't screw into it.
The railing will be welded in place.

Then build a fixture that you can screw into.
A wider plank that you drill a hole in the same dimension (somewhat larger might help) as the post.

Thank you so much! Just need to build, planning to have 15 posts so...
But I can, in fact, cast 5 a day, then reuse the wood ;)

My experience is that specifically supporting what you are going to cast in place, whether it is posts or just plinth iron/post shoes, is the most work involved in a casting.

Yes, everything takes time. It takes me about 1 hour to dig a hole. I have to break rocks and such to get it done. It will end up being between 30-40 cm deep (only).

I thought you could support the posts with "lath" and tape. Like 3 sticks around the post that you tape together.

Sure, but the advantage of screwing is that it's easier to adjust if you don't get it perfectly straight on the first try.

Then you can also drive a screw against the post to prevent it from sinking down.

Can go with some clamps as well, which can be propped up with some wooden planks, stone, and sand. Or you can combine the suggestions and secure the supports with clamps.
 
I would have built a "box" that I slide over the post and then place sandbags or similar on the wooden box against the post to keep it stable and then pour in some concrete in the hole to lock it.

Then the next day remove the box/bags and finish pouring the concrete.

Planks over the hole (Screwed crosswise) then put a clamp over the plank and post when it is plumb.
If you put a bolt in the four corners, you can fine-tune with the nut until it is plumb
