How to handle door and window casings during insulation?
I think you mean externally.
If so: Move doors and windows out to normal standard and then it will sort itself out.
I think you mean internally.
If so: Keep doors and windows in the existing location and put a trim piece in the recess that is formed, preferably in a light color like white or light light gray. Then the trim and molding will sort itself out.

It doesn't need to be smaller windows; it all depends on the measurement you give the jamb.
Of course, it can "creep about 13 mm on each side depending on the sheet thickness, but you can take a picture so we can see how you plan to proceed.
This can be done in different ways as well. and I don't have a good picture to upload...
If you take a picture of how it looks and how you plan to add insulation then.
It might be enough with a thin masonite panel to use as a jamb panel, or maybe an MDF panel. As you understand, the conditions depend exactly on the way you do the job.
If you haven't started yet, I suggest you improvise your way forward.
