I have planned to buy some different plywood sheets (read expensive) to have for various construction projects.

How should they be stored to prevent them from bending, etc.?

Lying flat seems to take up a lot of space...

It's not a dumb question if you don't know...

It's a stand, with or without wheels, where you can store sheet material standing on edge. Often in square tubes with several tubes at the bottom that the sheet stands on and a sloping support so the sheets don't fall outward.
The support is sometimes covered by a sheet to provide good contact, and the tubes that the sheet stands on are at a 90-degree angle to the support so that you don't place the sheet on a corner that might get damaged during storage.

I think for you it's good to have the sheets standing with support so that they don't warp as they might if they're only leaning against a wall and only supported at the top. It can be behind a workbench or machine or on a cart that can be moved if it's in the way.

Search "lumber rack plywood" or similar online, and you'll find countless variations.
