I need to extend this wall in focus by 1-2cm. Since there is already a missing piece of plasterboard at the top, I was thinking if one should remove the remaining plasterboard and put up double plasterboard. Is there any way to get the corners nice from the start?

There probably is, but if the corner is only made of plaster, it won't take long before it gets damaged.

of course double drywall and some corner protection
but ts only asked if it was possible to install double drywall which is absolutely fine

The original poster didn't ask if he could install double gypsum, but if he could get the corners looking nice from the start

yeah yeah easy to miss
there are different types of corner protectors
 
Or put on a pre-lacquered MDF that is slightly wider than the wall, and it will look good.
Painted and unpainted MDF boards, one white and finished, the other brown and unfinished, with a smooth surface ideal for construction projects.

why not?
but I think if you want smooth corners, the plastering will give in
