Expose the chimney?

Hi! I just tore down a wall that had a built-in bookshelf. Behind it, I found the chimney and thought that maybe I could expose the bricks. I think it could look really cool! Can I just chip away the plaster stuck on it, or is there something I should consider? Is it possible to tidy up the "joints" between the bricks by applying some extra mortar there? Do you have any fun tips and ideas?

if the chimney is used for burning, it should preferably be plastered for safety's sake - no smoke and toxic carbon monoxide in the home
