Door holder?

I'm building a greenhouse. I need an "adjustable" hatch holder for the upper window that should be able to open different amounts depending on the outside temperature. I have found some variants for boat hatches... but they often get pricey. Does anyone have a good tip? //

Manual adjustable latches I am not very familiar with, but there are many good automatic ones that open at temperature if you can consider those?

they looked nice the problem is that the lower part of these does not fit in my greenhouse...since the hatch that needs to open is angled but then comes directly the "doors" so would have needed a slimmer version or alternatively a manually adjustable one that can be mounted on the side...
