As the topic states, I am considering creating a new doorway in a load-bearing interior wall made of hollow brick. Do I need to place a long stone above the doorway that locks against the wall beside the door? Does the same apply to windows?

But spontaneously, yes, you need to make a lintel to transfer the loads to the remaining surrounding wall.
