Attaching shelves to a very uneven wall

Hello!

I am building a pantry in a space where there was once a bread oven.

The walls are very uneven, consisting of plastered stone.
Does anyone have any ideas on how to best attach shelves to these walls? Cutting to shape along horizontal irregularities is no problem, but how to get the shelves in place, completely horizontal when there are so many vertical irregularities?
Regular brackets seem difficult, as they will point in all sorts of directions due to the uneven surface...
What do you think about a "post" at the front edge of the shelf, and then attaching the back edge with something like rebar that is screwed into holes in the wall? How easy is it to get it straight and neat?

If there are no problems with jigsaw cutting horizontally, there shouldn't be any vertically either.
Place a jigsaw-cut piece of wood between the bracket and the wall.

But it will probably involve some fiddling.

How uneven is it? I just attached shelves on brackets in the basement and used spacers on the tracks against the wall, but then it differed by at most maybe 20 mm.

Thanks for both tips, there is probably a 1 dm difference where it is worst so we might have to go for jigsawing... but yes, ugh what a hassle... hehe.

Why not just set up some cheap bookshelves from IKEA?

Well, considering that the walls are as uneven as they are, we lose a lot of potential shelf space by putting in ready-made shelves, so something custom-built is probably necessary.
