I suggest horizontal raw plank with vertical 1200 gypsum on the outside.

What kind of room is it? You can manage perfectly fine with OSB. The difference is more in price than in tensile strength between OSB and plywood.

The room is a regular interior room. So OSB might be enough then? I've heard that plywood is supposed to be much better.

That's a myth.
Buy plywood if you want, I find it hard to see that you'll regret it if you choose OSB. 👍

I was also thinking about doing something similar in the garage. It's a cold garage, but about 1/5 of it is sectioned off as an insulated storage room. I was thinking of taking down the existing gypsum wall and only replacing it with plywood or OSB. Is that okay to do, or do you have to use gypsum as well?

You can do that.
But if you still plan to have plywood or OSB on the outside, you could mount it on top of the gypsum.

Drywall is good for reducing the risk of fire spread.

Puttying and sanding are optional, you can probably have the drywall as it is or just painted with a simple color if you wish.
