We have a large old outbuilding on the property that I'm considering using for woodworking, at a very amateur level. I was thinking of starting by building some things that will partly include plywood, workbench, shelves, and various items.

Will it be a problem to use plywood in a cold uninsulated shed? Considering moisture and temperature fluctuations.

What I'm wondering is if the plywood will lose its shape when it becomes humid in the air, like MDF can do?
 
Plywood works excellently.
Yes, like all other trämtrl, it can be shaped when it's damp. However, less than solid wood, not to mention MDF and other particle boards.
So, if you just build sufficiently rigid constructions, there are absolutely no problems at all.
