I got sick from formaldehyde in particle boards in the 70s. We are now building our 2nd house and I wonder if anyone knows good building materials that have come out in the last 3 years. Are there, for example, kitchens without formaldehyde? Stainless steel exists but costs a lot. Everything is of interest as long as it is as emissions-free as possible.
 
My understanding is that the boards contain/emit significantly less formaldehyde now than in the 70s, but I have only vague perceptions of how much formaldehyde is practically in the air in a modern house. The ventilation is likely better too?

Solid wood kitchens have less but cost accordingly, you should request quotes and demand data about this from the manufacturers.
 
There are joineries that make their own frames in wood.

Hmmmm.......all wood contains formaldehyde so wood is out in our choice of material. We're going with stone houses.

Build kitchen frames with masonry, check how they do it in North Africa for example.

Almost all kitchens contain melamine and unfortunately, we have formaldehyde again!!!

Sure, it's possible to build with masonry but I would probably buy a simpler solution if available. Today we have a welded kitchen that my husband made. Ikea frames where we replaced the bottom plate with fiber cement. Stainless steel doors. Anything is possible, but we thought we would try to find ready-made solutions for the new build.

What are the substances in solid wood that make you sick? In laminated boards, I know there is quite a bit of crap.

As I wrote before, you must think outside the box, special solutions, maybe build up frames with brick, metal drawers, and shelves perhaps..

Yes, we've thought outside the box many times, was more thinking about if any new good building materials have come out since we built our current house in 2012..

Watch out for wallpapers and curtains, because paper and textiles do too.

By that I mean that levels are relative, whether something is present or not is not an absolute thing. Now I don't know anything about your allergy, but just because something theoretically contains a substance one is sensitive to, it doesn't necessarily mean it's in concentrations that one can react to.

But the question is rather whether the gas is released. Most of what we eat also contains formaldehyde and it is produced in our own bodies, but you can handle that, right?

But IKEA frames (particleboard) contain formaldehyde. Are you saying that's okay?
