I am looking for an easy to assemble TEMPORARY platform that can be set up for tasks such as rebuilding a chimney or installing a chimney cap. I found this image on Google's image search but can't find anywhere to purchase such a thing.

I would consider building something in wood to the measurements you need. Can you also include some form of simple railing?
 
When we have, for example, washed the roof, we have used two 90-degree iron pieces, about 1x1 meter, to place over the ridge with hooks to attach a ladder. The model you found is fastened around the chimney and makes, for instance, an enclosure impossible.
 
Or you can build two trestles yourself from some framing lumber like 2x4. The "trestle gables" automatically become collapsible for easy transport up to the roof. The central bolt at the ridge should be sturdy. I don't remember if I used a 10 or 13 mm threaded rod - in any case, it was too weak.

I made mine in wood.

In addition to the one in the picture, I had two wooden ladders that looked like a V and that I hung over the ridge and moved with me when I was working on the metal roof.
