In the picture is a new cellar ceiling made of pine, against the cellar wall. Gap approximately 5-20mm.

I have about 50 linear meters that I want to "seal" to make it somewhat tight against dust and drafts as the joists are open above. I have left the gap so the wood can move. Plus, the cellar wall is uneven.

Suggestions on what I can use to seal this gap/space? That simultaneously allows the wood to move.

Why should wood move, mine doesn't move.
It's difficult to deal with crown molding. You could use a planed piece (it acts like a frame around) available in different sizes that you attach to the ceiling.
It will be quite visible regardless of what you use since the gap isn't even, or is it just you who did a little cheat with the cut? Especially in photo 2 where the ceiling has a joint in line with the wall, it will look crooked.
 
The sealing needs to be in place before moldings, etc., as it is a couple of years away in time.

Either fill it with some compound or put some reasonably tight strip/sealing.
