As the headline states, I know that the wall is load-bearing, how can I proceed to fit a frame that is 5 cm higher than this one? I would prefer not to install a 20 when I've used 21 in all other places in the house. I have 2 doors with the same problem.

A wooden wall with visible knots and screws above a doorframe, likely part of a structural change to accommodate a higher door casing.
 
Measured more accurately now. Only 2 cm are missing! Can I perhaps saw off the new frame and door? It's the Finland door from Bauhaus if you need to know to answer. Should I consider anything if I am to/can saw it off?

What does it look like behind the råspont or whatever it is? Are you sure that the beam above the door frame is load-bearing? Doesn’t it seem like it's the side beams that are load-bearing, which meet up against the top plate up there? The space from the top plate and the beam above the frame might be empty space, in which case it would be no problem to saw out and then put in a new beam. But you might need to remove a few boards to see what the wall looks like :)
