Old house with a ceiling height of 2.70 meters. Suitable drywall sheets seem to be rare. Does anyone have tips on prices and places to purchase between Stockholm and Hoburgen (Gotland), or nearby? When you google, you get directed to various pages that don't actually have the product. It also seems that 1200 width is rare nowadays. It might be tricky to put them up against the wall. There used to be a company in Danvikstull many years ago that seemed to have drywall in all lengths. 3 meters, etc. But they're probably not around anymore.

Renovation plasterboard 900x2700 should be available, 1200 width probably doesn't exist.

If possible, use regular drywall instead. Renovation drywall is flimsier to work with. Most annoying is that it often rises and creates mounds around the screw head, making it a hassle to spackle. With regular drywall, the screw head sinks in much nicer and it ends up smooth and fine.

Depending on how many sheets you need, the hardware store can bring it in for you. 900x2700mm is a standard sheet; I don't think 1200 width is manufactured in Sweden anymore.
