This is not done completely. Primarily, all central walls, i.e., the walls running through the middle of the house parallel to the ridge, are load-bearing. They handle, among other things, all roof loads and probably the majority of floor loads. The house has a plank frame. Therefore, many walls have the capacity to be load-bearing. Some floor joists may run parallel to the central walls. Some walls may have an important stabilizing function even though they are not load-bearing in the proper sense. For example, the wall between the dining room and the living room on the ground floor should not be taken down.

Then we probably just need to try to get someone to come and look at it this fall, it's not our house in the drawing but one further down the street, but the houses were built at the same time with the same design, etc., mass production by the glassworks. The difference is that our entrance is in the middle of the house (two-family house) so we currently have two doors with a very annoying partition wall between them that we would like to take down to create a large hall. We've been waiting all summer for a carpenter who "will see if he has time to come and look at it."

In such situations, you should not trust carpenters unless they are very old and experienced and master the type of construction. Unfortunately, the latter are probably no longer alive. It doesn't sound like an impossible problem, but I wouldn't comment without a drawing.
