I have two concrete posts that support the floor beams.
How do you safely investigate what these rest on? Do they have a "foot"? Are they standing on rock/mountain?

There probably isn't any other way than to remove the plastic around them and dig (if necessary) - otherwise you have no idea if it's built correctly :)
But do you have problems with settling or why is it important?

I prefer to know rather than assume...

If you move the plastic aside a bit, you can see how it looks around the support, then you can drive a screwdriver or something similar down and feel what's underneath if it is not cast or standing on rock or a concrete footing.
