Recently bought an old agricultural property and plan to convert the old potato storage into a heated double garage.
The exterior walls are made of masonry with plaster on the outside, and I intend to insulate the walls from the inside, but how do you do it correctly to avoid moisture problems, etc...

There is surely someone who understands this better, but my understanding is that you insulate this wall from the outside, not from the inside, to avoid moisture problems. Like putting up PIR and plastering on it. Not cheap.

Exactly! Usually, it's done from the outside, but I'm thinking there must be some way to get it right from the inside as well, foam plastic?
 
Imagine a regular exterior wall where your brick wall is the facade material.
So you frame a new wall with an air gap and preferably wind barrier on the outside.

Building externally presents other problems, the eaves are not very generous and it would not look aesthetically pleasing as it is a whole row that is connected with the potato storage and blends together.
 
No, you put the studs on the inside. The brick wall is your facade material.

Yes, but more specifically... steel studs directly against the wall? foam plastic?
