I had planned to extend a brick wall by about 100cm with gypsum and steel studs. I haven't mounted the gypsum yet but noticed how uneven the brick wall is, leaving several centimeters of space, how can I solve this?

(Cutting the brick straight is not an option due to dust formation)

Depends on the surface, if you plan to paint it will definitely crack at the seam... better to apply some kind of strong fabric before painting in that case...
But as for the gaps, just fill them with some kind of cement-based mix like fine cement, repair mortar, house fix, or something similar...

It will be painted. Is it possible to mount the drywall first and then fill in with mortar? I'm wondering if it will just fall through? I've never used anything coarser than putty before :giggle:
 
Pretty difficult to get it nice without some form of molding, I think. If it's an older house, you probably shouldn't use any cement-based mortar. The existing plaster seems to have some lime content, probably lime-cement mortar.
 
It's probably easier to smooth the wall end straight before placing the plasterboard there.
